Baking time

Last night I made a peach and blackberry galette. If you have never had one, you are missing out! (don't worry there is a recipe here) First off, a galette: 

is a term used in French cuisine to designate various types of flat, round or freeform crusty cakes.


Prep Time: 30 minutes

Cook Time: 1 hour


  • 1 refrigerated pie crust, thawed but cool
  • 4 peaches, peeled, pitted and sliced
  • ½ cup blackberries
  • ¼ cup brown sugar
  • 2 tablespoons honey
  • ½ teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 2 teaspoon vanilla
  • 2 tablespoons flour
  • Plus:
  • 1 egg beaten with 1 teaspoon water
  • 2 tablespoons sugar


First roll out the pie crust and flatten it a bit more with a rolling pin, then place it on a non-stick baking sheet.

In a large bowl add your peaches and vanilla, mix. Then add your brown sugar, honey, cinnamon, nutmeg and flour. Mix well! (gently so not to bruise your peaches).

Okay so far so good! Now GENTLY fold in your blackberries

Take your fruit and yummyness and pour it in the middle of your crust leaving 2 or 3 inches all the way around. Work around the galette, pleating a pattern all the way around! (it's easy!) and pop it in the freezer for 15 minutes ( freezes the crust into place).


In a tiny bowl, mix one egg and 1 TSP of water and brush it all over the folded crust and sprinkle it with sugar. 

TIP: When I need to sprinkle things, I take a tea infuser and fill it up and shake it over the pastry. (it is a lot more even coverage).

Bake for 1 hour. Your crust will be golden brown and juice from the fruit will run onto the baking sheet.

Let cool and enjoy. It's amazing.
